The past 2 classes we had were about quick breads. Quick bread is a type of bread that is leavened with a chemical leavener (ie baking powder and baking soda). Quick breads include muffins, scones, biscuits, pancakes and waffles to name a few.
Honestly, the classes were a bit chaotic compared to the other pastry classes. We had a different instructor by the way, and that meant different way of teaching and running the class. In my opinion, it lacked the “flow” I was looking for, but there was more room to do whichever first. Maybe because the quick breads are not as delicate to handle compared to the previous lessons. I guess I was looking for that organization in everything (being the OC that I am).
Moving on, the quick breads, I would say are easier to do. Though not everything came out perfectly, there were still more good than bad results. Here’s what our group prepared for the 2 sessions.
L-R / T-B: Roast Beef with Yorkshire Pudding and Mushroom Gravy on the side; Peach Muffins; Rosemary, Olive and Parmesan Muffins; Cream Scones; Gaufrettes; Blueberry Muffins; Buttermilk Biscuits
Now all I need is a cup of tea and I’m all set! 😉
