Chicken and Apple Salad.


This is an all time favourite!  It’s quick and simple to make.  Just the right meal to whip up when you’re in a hurry.


Chicken and Apple Salad

Ingredients:
50-60g Romaine Lettuce, or mixed greens of your choice
2 Tbsp Tomatoes, chopped
2 Tbsp Onions, chopped
2 Tbsp Cheddar Cheese
70g Chicken, pre-marinated, pan seared or grilled, then cubed (See Caprese Chicken recipe for marinade)
2 Tbsp Sour Cream
2 Tbsp Roasted Sesame Dressing
1/3 Apple, sliced into thin wedges or cubed

Directions:
1. Chop the greens into bite size pieces. Transfer to a plate.
2. Stack the ingredients: onions, tomatoes, cheddar cheese, (cubed apples if this is how you want to do it) and cubed chicken.
3. Drizzle with sour cream and roasted sesame dressing.
4. Place the thin apple wedges on the side.
5. Take a photo and devour!

NOTES: I use Kewpie brand of Roasted Sesame Dressing, if any of you are interested. That’s a Japanese brand, so it could be stacked in the International section of the grocery. 😉
